Powerhouse Salads are a great tool to have in your back pocket over the summer. But they can't be bland. Fortunately, having flavorful dressing doesn't always have to be bad for you.  Here are some lighter versions of classic salad dressings that still pack that powerhouse punch of flavor.

My boyfriend hates eating plain greens, but he'll still eat one of these Lighter Club salads.

One nice thing about the dressing recipe is that you can tweak it to your own taste and acid preference.  Whether you have a ranch, blue cheese, or a honey mustard dressing depends on what you add to the basic dressing.

Basic Salad Dressing Recipe

  • 1 cup Greek yogurt
  • 2 Tablespoons mayonaise (not Miracle Whip)
  • 1 Clove garlic crushed
  • 1 Lemon, juiced
  •  Pinch of salt

For Ranch dressing add:

  • 1 teaspoon dill weed
  • 1/2 teaspoon cracked black pepper

For Blue Cheese Dressing:

  • 1/2 teaspoon cracked black pepper
  • 2 Tablespoons blue cheese crumbles

For Honey Mustard Dressing add:

  • 2 Tablespoons honey
  • 1 Tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar

Lighter Club Salad

Makes 2 large salads, or 4 side salads

  • 1 batch of Home Made Ranch Dressing (above)
  • 4-6 large leaves red leaf lettuce, chopped in 2" pieces
  • 1/2 bunch spinach, washed and chopped into 2" pieces
  • 2 boiled eggs
  • 2 roasted or smoked chicken breasts, cubed
  • 1/2 pound of honey ham, cubed
  • 2 Tablespoons blue cheese crumbles
  • 2 Tablespoons Sunflower Seeds
  • 1/2 a small sweet onion, sliced thinly
  • 2 tomatoes, diced
  • 2 Radishes sliced thinly
  • 1 cucumber halved, and sliced thinly
  • 1 baby avocado sliced
  • 1/4 cup shredded cheddar cheese

Get a large bowl and place you lettuce and spinach in the bottom.  Add the rest of the vegetables, sunflower seeds, blue cheese crumbles, and ranch dressing.  Toss until well coated.  Divide onto two or four plates.  Place the chicken and ham on top of lettuce mixture, divided evenly.  Slice the boiled eggs, and fan it out next to the chicken.  Place the avocado next to the chicken.   Serve immediately.
