It is still winter, even in the South, but this is no time to hibernate. Over the past two weeks we have hosted two events with the common theme of Soup and both were well received and relatively easy to pull-off. I always enjoy sharing quick and easy entertaining ideas. Some of my very best ideas are stolen, and this one was a “borrow” from Stacey and Vince Owens and the Annual Soup Night they host on Christmas Eve.
Our first was a gathering of friends for a Saturday evening of Soups, Breads, Desserts and of course Wines. This is a group of foodies, so I expected this group to be all-in when the gathering was announced. We had a Carrot Ginger, Butternut Squash finished with Pear, White Tuscan Bean, White Bean and Ham, Roasted Vegetable Soup finished with Pesto. Two very different Chilis also were guests at the table. There was something for everyone! One of our friends, an accomplished bread maker, was quickly assigned to the task of creating our breads and I complemented these with some Buttermilk Cheddar Biscuits since the event was celebrated at my home. I will share the recipe below.
There was no need to make anything difficult for this gathering; everyone brought soups already warmed in Crock Pots and wines to accompany. Another friend with a hand at baking brought a favored Butter Cake for our enjoyment as well. It was a simple evening when all of us could sit and visit and enjoy different soup options. I am all about some easy entertaining options and this event is a keeper! I brought out every bowl and soup spoon I had in the house and we called it a party.
Then, there was the need for the Neighborhood Women’s Club to gather, so we coupled this gathering with a Soup Night and a meeting to plan the activities for the spring and summer. Again, this was a very easy excuse to get the women together and out of their homes to enjoy a pot of soup and some time with the Ladies of the Neighborhood.
Buttermilk Cheese Biscuits

It’s Soup Night, we needed a bread as a side! I met these Buttermilk Cheese Biscuits from the one and only Nancy Waldeck and I think these are the perfect solution.
- 2 cups self-rising flour – See recipe below to make your own self-rising flour from all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon sugar
- ½ teaspoon sea salt
- 1/3 cup unsalted butter
- ¾ cup light sharp cheddar cheese, grated
- 1 cup light buttermilk
- 2 tablespoons unsalted butter, melted
- Preheat the oven to 350 degrees.
- In a medium bowl, whisk the flour, baking powder, sugar and salt together.
- Cut in the butter with a fork or pastry blender until it resembles cornmeal.
- Stir in the cheese.
- Pour in the buttermilk just until blended ( Do Not Over-stir! )
- Drop by tablespoons onto parchment paper for best results. Also coat this with non-stick spray.
- Brush the dough with melted butter and bake for 12 - 15 minutes or until the tops are golden brown.
- Enjoy hot out of the oven.
*** You can make your own Self-Rising Flour. Sift together, I cup of all-purpose flour, 1 ½ teaspoons baking powder and ½ teaspoon salt.
