When salads are mentioned filling is not always the word that comes to mind.  People tend to think a teasing prelude to a more savory segment to a more complete meal.  There might be a few exceptions: steak sliced on a bed of spinach with a drizzle of balsamic vinaigrette, grilled salmon with mixed greens marinated in a sesame ginger dressing, or a Mexican salad with fajita grilled chicken and freshly diced salsa.

Powerhouse Salads offer us a step up from such a simple dinner menu.  In addition these salads bring more to the table than your average side salad.  A powerhouse salad is amped up the nutrition department.  The interesting part about these salads is that they run the gamut of flavor and ingredients.  Below is a relatively simple recipe for a cranberry spinach salad.  The great thing about this recipe, as with all recipes, is that it is just a suggestion waiting for a tweak or two to customize it to your culinary tastes.

Cranberry Spinach Salad

Ingredients

  • 1 package of fresh spinach
  • 1/2 cup cranberries
  • 1/4 cup thinly sliced red onion
  • 4 slices of bacon, crispy and crumbled
  • 1/2 cup honey
  • 1/2 cup lime juice
  • 2 tpsp dijon mustard
  • optional: hard boiled egg, nuts, cheese

Directions

Preparation is fairly simple even by salad standards.

  1. Wash the spinach and shake it dry.
  2. Toss it in a large bowl with the cranberries and onion.
  3. Mix the bacon, honey, lime juice, and dijon mustard together and warm it up in the microwave for 30 seconds to a minute (until the honey thins out a bit) and then stir the dressing up until it is creamy and smooth.

Depending on your tastes you might want to toss the salad with the dressing or offer it on the side to your guests.  Either way you are in for a treat.
